Local pitmaster serving it up for Steak, Stein and Wine
The Cameron Chamber of Commerce is excited to partner with 44 Farms to kick off the 7th Annual Steak, Stein & Wine Festival on Oct. 12 in downtown Cameron.
This is an exciting year for the event as the featured performer is the national sensation, LOCASH. Pair that with your grilled 44 Farms steak dinner and a hometown street dance; that feels like a party.
Local pitmaster, Sam Berry from Circle S BBQ & Catering, is firing up the grills so grab your tickets, savor every bite, and raise your glass to good times.
“I think the most important thing is starting off with a good quality and cut of meat,” Berry said. “If you have a good quality steak, then everything else usually falls right into place. With anything you cook, you have to put all your pride into it to be sure you are satisfied with the end result. Around my place we always say, cook from the heart.”
This year the festival will serve up New York Strip. Berry said a New York Strip is an excellent cut for a steak that isn’t going to be too fatty, but has enough marbling to remain tender. As with all steaks, a very hot, charcoal fire grill is key to getting the perfect sear on the steak.
Garlic Smashed Potatoes and Seasoned Green Beans will be served along with the steak.
“I don’t really have a “favorite” but at home, I do enjoy cooking a good steak,” Berry said. “Obviously barbecuing and trying different methods with that is always something I like to do, and just any new and different recipe I may find.”
Berry knows his way around a grill and smoker. He has owned Circle S BBQ for almost 25 years.
“The BBQ business began for me in 2000,” he said. “I had always enjoyed barbecuing and was interested in getting into business for myself. Chuck Swindell owned and operated Circle S at the time and was ready to retire, so the opportunity came up for me to purchase the business. I started in Chuck’s tiny building out on the corner, and here we are almost 25 years later, in a larger building, expanded menu, and still serving some of the same recipes Chuck did plus many others. I take a lot of pride in the fact that I have been able to provide BBQ to my hometown and give back to the community for as long as I have.”
Berry is excited to be the cook for the 7th annual Steak, Stein and Wine Festival.
“Events like this are important to our city and county because they not only bring in visitors from other places, but also bring our local community together,” Berry said. “I’ve travelled a lot of places and you don’t often find communities who bring people together from all walks of life, enjoying good food, music, and fun all at the same place and time. When out-of-towners see that, it makes them want to be a part of it and join in too, which is great for growth and tourism.”
Of course the steak is the star of the show, but the festival will feature lots of other fun things to do.
